Prepare your favourite vegetables in the usual way. Wash the chicken and remove the giblets. Season with salt and pepper. Place on the barbecue and cook using the indirect cooking method. A whole medium sized chicken should take about a couple of hours on a medium heat barbecue, depending on the weight. Turn the Chicken after one hour to ensure even cooking. |
The chicken is cooked when the juices run clear when pricked with a long fork. Serve with vegetables, roast potatoes and a little gravy. During the cooking period try not to check the chicken to many times because heat will be lost when you lift the lid. Cooked on the barbecue, this recipe is so simple and it makes an excellent roast dinner especially in winter. Try adding a few woodchips to the charcoal for extra BBQ smoky flavour. |
