Hickory Smoked Pork Ribs.

Just place your prepared ribs in the smoker bag, seal by folding the foil twice and place in the pre heated oven.

Hickory Smoker Bag With Pork Ribs

When cooking is complete, just carefully cut the smoker bag and peel back the foil. You now have the option to return to the oven to brown, if you wish.

Pork ribs with Jamaican style jerk seasoning (Island Spice Rub). Smoked with a pure hickory smoker bag and basted with Shanghai Barbecue Sauce. The best tasting ribs you will ever have smoked indoors and its all your own work.

Preparation

Rub your ribs with your favourite seasoning or purchase a ready mixed rub. Leave covered for 30 minutes at room temperature.

Pre heat your oven to 475ºF or 250ºC.

 

The pork ribs above were smothered in Shanghai barbecue sauce and returned to the oven for ten minutes to heat the sauce and brown the ribs a little more.

Hickory Smoked Pork Chops with Apples.

Hickory Smoked Pork Chops Marinated in Pure Apple Juice.

Purchase 1 inch thick pork chops and marinade in pure apple juice for 4 hours.

Place the chops in an Hickory smoker bag and add a couple of eating apples chopped in half and de-piped. Add a couple of cloves of garlic, not peeled.

Place in your pre heated oven for the recommended cooking time.

Brown the chops for the last 10 minutes of cooking time. Serve with the apples, crispy roast potatoes, green cabbage and a little but really thick gravy.

 

Hickory Smoked Pork Ribs

Place the ribs in a Hickory smoker bag, seal by folding the edge twice and fold the corners.

Place in your pre heated oven, bottom shelf, for 15 minutes. Then lower the temperature to 375ºF or 190º C for the remainder of the cooking time. Please see instructions provided with your smoker bag because the total cooking time depends on the amount and type of food you place in the bag.

The pork ribs in this recipe were cooked for a further 55 minutes and produced the most moist and tender ribs we have ever cooked in such a short cooking time.

After 45 minutes we peeled back the foil, added the Shanghai sauce  and cooked for another 10 minutes on the top shelf of the oven. Serve with chips or rice.

The fresh fish used in this recipe was salmon, sea trout, mackerel, tuna and haddock.

Alder Smoked Fish Buffet.

Purchase 5 different types of fish and prepare by seasoning with a little salt and pepper. Place in a little olive oil and lemon juice. Add fresh parsley, two garlic coves, peeled and crushed and leave covered for one hour.

Place in an Alder smoker bag place in a pre heated oven for the recommended cooking times.

Peel back the foil when cooking is complete and serve from the smoker bag on a tray with crusty French bread.
