Leek and Bacon Parcel in a Parsley and Butter
Sauce |
Chop the end off the leeks and then chop off the dark green part of the
leeks and discard.
With a sharp knife, slice the leeks at an angle.
Gently rinse the leek slices in a bowl or pan with cold water and
place on double layer of silver foil.
Cut the bacon into small strips and fry or grill until crispy, add to
the leeks.

Prepare the parsley sauce according to the instructions on the packet.
While the sauce is cooking add the knob of butter.
Now is the time that you can make the sauce your own
by adding fresh
parsley and or a little garlic or just season with salt and pepper.
Allow the sauce
to cool and then pour over the leeks and bacon, seal the parcel by
carefully folding the foil over the leeks. The parcel is now ready for
the barbecue. |
Cooking time is
approximately 15 minutes when cooking directly over the coals, longer if
cooking indirect.
Check periodically by opening the parcel if you wish. You can place the parcel on the side of the barbecue grill while you are
cooking the meat.
