Make two boats with a double layer of the foil big enough for the fish. Finely chop the garlic and spring onions add to the olive oil in a small bowl. Add the black pepper and lemon juice to taste. Rinse the fish under cold water and wrap a slice of streaky bacon around each one with the join under the fish. Place into the foil boats. Spoon the mixture over the fish and into the fish cavity. |
Place the fish on a barbecue using the indirect cooking method, cook for 20-30 minutes or until the fish begins to flake back with a fork. Serve with Lemon Slices, salad and French bread.

For best results use fresh mackerel. Don't forget even the short shopping list on the right can be made easy by using garlic and black pepper from the spice rack in the supermarket. Lemon juice can also be purchased in ready to use containers. |
