Season the belly pork both sides with the herbs. Buy a ready mixed jar of herbs from the spice rack at the supermarket if you prefer. Lots of fat content in belly pork ribs, so cook them using the indirect method. This will seal the meat and will help you to avoid flare ups. Turn a couple of times during cooking using tongs. Indirect method: Approx15 to 20 minutes

While the belly pork ribs are cooking, peel and quarter 2 cooking apples and add a little brown sugar. These can now be wrapped in foil and placed on the barbecue. Cook until soft (Test with a fork) Finish cooking the ribs by using the direct cooking method and grill over the coals to crisp the edges.
