Beer Can Chicken Why a Beer Can? Method

An excellent idea from America.

Beer can chicken is a very popular barbecue idea, which is now practiced all over the United States.

There are various stories which try to explain why someone should suddenly have an idea, to place a can of beer  up the backside of a chicken prior to barbecuing. But they did and what followed was a national craze.

The fat juices from the chicken run into the pan, which improves the fat content of the chicken for a better tasting and healthier dish.  

The moister from the bubbling beer inside the chicken flavours and makes the chicken more succulent and stops the chicken from drying out during cooking.

Because of its popularity various stands are now available to improve on the idea But its possible to manage without one.

 

Drink half the can of Guinness or beer. Flavour the Guinness in the tin with a  bay leaf and add fresh garlic. Wash the chicken and remove the string. Place the can in to the stand, trim any excess skin from the chicken  and open enough to accept the can. Cont below..

Beer can chicken stand

If you wish you may be able to purchase the beer can chicken stand above. This will improve the stability of the chicken during cooking. You can manage without one, use scrunched up silver foil for stability if required.

Juice pan

Add a small pie or oven pan to catch the juices from the chicken during cooking, this will leave your barbecue clean and  stop the fat from getting on to the coals.

Guinness

Place the Guinness can (avoid cans that contain widgets) into the stand. You could also add a little water to the pan for easy cleaning later.

A 3lb chicken is ideal for this recipe

Slip the chicken over the can and plug the top with an onion, see picture at the top of this page. Season the chicken with a light garlic, pepper and tarragon rub.

Warning

Be very careful when cooking is complete, remove the chicken very carefully from the tin which still contains very hot beer!

Its best to leave for while and allow it to cool.

Place the chicken on the barbecue using the indirect cooking method for approximately 2 hours or until the juices run clear when pierced with a long fork

More Ideas

Try curry powder to flavour the beer. Try cola or your favourite soft drink in a can.
