1 teaspoon of tarragon
2 teaspoons of chopped parsley

Melt the large knob of butter in a microwave (a few seconds) add to the olive oil mixture.
Season with salt and pepper to your liking.
Soak your wooden skewers for an hour in water to stop the wood from burning on the BBQ.
Peel the shells from the prawns and discard. Lightly rinse the prawns under cold water and add them to the BBQ marinade sauce.
Give them a good stir, cover and marinade for at least an hour.
Remove the prawns from the mixture. Fold the prawns and skewer. Barbecue directly over the coals for 3 minutes each side. They will turn orange when ready.
The olive oil mixture can be reheated in the microwave and poured over the prawns when serving.
Mop up the sauce with French bread.
Buy from your local fishmongers and don't forget to ask him to gut it for you. He will be happy to do it and usually, fishmongers don't charge any extra.
Sea bass can be expensive to buy, so save this recipe for when its just a small party of friends.
Super as a starter with a little bread and butter or as a main course with some barbecued new potatoes and salad.
BBQ Ideas and Tips
Try Madagascan Black Tiger Prawns in a marinade similar to above but this time we used roasted sesame seed oil instead of olive oil for a more oriental flavour. Super with garlic bread.
