|Melt in the mouth lamb chops infused with mint and garlic
4 Lamb chops
4 Coves of garlic in their skins
A good handful of fresh mint
Arrange 2 pieces of kitchen foil large enough to wrap your lamb chops.
Lightly wash the mint and place on the foil.
Barbecue the lamb chops over hot coals for 1 minute each side to seal the meat.
Remove from the barbecue and lay the chops on the mint.
Add the garlic coves and wrap like a parcel.
Place back on the barbecue with the flaps of the foil face down. Cook using the indirect method for 1 hour.
This is so easy, you can do it while balancing a glass of ale in one hand!
For the 5 recommended 5 pieces of fruit and veg a day, this recipe adds absolutely nothing.
But it does make you feel, its good to be alive!
