|Barbecue Mackerel with salad and Crusty sliced bread.
2 Fresh Mackerel gutted
4 Tablespoons Olive Oil
2 Coves of Garlic
2 Spring Onions
1 Fresh Lemon
2 Slices Streaky Bacon
Make two boats with a double layer of the foil big enough for the fish.
Finely chop the garlic and spring onions add to the olive oil in a small bowl. Add the black pepper and lemon juice to taste.
Rinse the fish under cold water and wrap a slice of streaky bacon around each one with the join under the fish. Place into the foil boats. Spoon the mixture over the fish and into the fish cavity.
Place the fish on a barbecue using the indirect cooking method, cook for 20-30 minutes or until the fish begins to flake back with a fork. Serve with Lemon Slices, salad and French bread.
For best results use fresh mackerel.
