2 Halves or an whole duck
Salt and black pepper
Plum sauce (optional)
If you have an whole duck, cut 2 oranges in half and squeeze the juice into the cavity of the duck.
When squeezing let the juice run through your fingers so to catch any pips.
Place the duck on a large plate, prick the skin with a fork all over the top (see picture) and then squeeze some more juice over.
Season the duck with salt and black pepper and leave to stand for 30 minutes.
Barbecue using the indirect cooking method. Cook for one hour, then turn the duck 180° and cook for a further hour to ensure even cooking. Just before the end of the cooking time, glaze with more orange juice.
Duck is easily purchased from the supermarket, fresh or frozen. If frozen, make sure the duck is fully defrosted before cooking.
Cutting an whole duck into 2 halves will shorten the cooking time.
Don't like orange? then why not try a plum sauce glaze. you can buy it ready made from the supermarket.
Look for the one with ginger and chilli added for a super Chinese taste.
