Barbecue Cod with Tarragon and Parsley
1 Medium cod
1 Teaspoon of Tarragon
2 Teaspoons of Chopped Parsley
4 Cloves of Fresh Garlic
Small Cup of Olive Oil
Mix the olive oil, tarragon and parsley. Place the mixture into a prepared silver foil boat, add the fish, coating both sides. Add the cloves of garlic and cook on the barbecue using the indirect cooking method.
Direct cooking time: approximately 10 minutes. Indirect cooking time: approximately 15 to 20 minutes or until the fish flakes.
Why not cheat and make a quick and delicious parsley and butter sauce.
1 pkt of basic ready to mix white sauce, 8 oz butter and 1 tablespoon of chopped parsley.
Make the sauce according to the pkt instructions.
Add the butter in slices over a low heat, stir the sauce all the time to stop it burning. Add the parsley stir and serve over the fish.
Serve with a single leaf salad, and brown bread butter triangles.
This dish can be cooked at the same time as other joints or larger pieces of meat are been barbecued.
Just remove the fish when ready, leaving the joint cooking on the barbecue for the main course later.
