Delicious Stuffed Mushrooms on the Barbecue

Scoop out the centre of the mushrooms and put aside for later. chop the red pepper in half and then chop into small cubes.

Be careful not to use any of the seeds, they are very hot and will spoil this dish. Repeat with the green pepper.

Chop the red onion into rings and crush a couple of garlic cloves. Add to a small mixing bowl with the scoped mushroom pieces, add the peppers and a tablespoon of olive oil.

Season with black pepper.

Stir fry for 4 minutes, stuff the mushrooms with the mixture and add another dribble of olive oil. Leave to stand until required.

Cook on the barbecue, directly over the coals for about 5 minutes depending on the size of your mushrooms.

If your barbecue is very hot, place the mushrooms on a double layer of silver foil, this will help stop them charring.

Be creative, open the fridge, what's in the salad tray? any bits or leftovers that you can use to stuff your mushrooms?

Some of the best surprise recipes can be compiled from a limited supply and a little imagination.
