Mushrooms stuffed with peppers
 

  

Method

Really juicy and healthy too!

 

Just scoop out the centre and put aside for later. chop the red pepper in half and then chop into small cubes. Be careful not to use any of the seeds, they are hot and will spoil this dish. Repeat with the green pepper.

Chop the red onion into rings and crush a couple of garlic cloves. Add to a small mixing bowl with the scoped mushroom pieces, add the peppers and a tablespoon of olive oil. Season with black pepper.

 

Stir fry for 4 minutes, stuff the mushrooms with the mixture and add another dribble of olive oil. Leave to stand until required.

Cook on the barbecue, directly over the coals for about 5 minutes depending on the size of your mushrooms.

If your barbecue is very hot, place the mushrooms on a double layer of silver foil, this will help stop them charring.

4 Large mushrooms

1 Red pepper

1 Green pepper

1 Red onion

2 cloves of garlic

black pepper to season and a good dribble of olive oil.  

Serve with sirloin steak
