Lamb Chops on the Grill

Prepare your barbecue for direct cooking.

Mix together the olive oil, fresh mint and rosemary. Brush or dip the lamb chops  with the mixture.

Leave to stand for 30 minutes.

Barbecue over the hot coals turning the meat frequently to avoid charring.

Use tongs to turn the chops to keep the juices in and avoid flare ups. The chops are ready when the juices run clear.

Serve with salad.

If you like mint, why not try making your own mint sauce, its easy:

1 Tablespoon of finely chopped mint combined with 3 tablespoons of vinegar and 1 teaspoon of sugar.

Stand for 30 minutes and its ready
